I have about a 50/50 combination of vertical and horizontal images. My horizontal are 1920 x 1080. But the site suggestions the longest dimension be at least 1600 px. How should I format my vertical (portrait) images?

If your horizontals are 1920x1080, then your verticals would be something like 1080x1920.
So long as your horizontals are wider than 1600, and your verticals are taller than 1600, you should be fine.
